So, I was tickled beyond pink when Christophe Adam opened an outpost of his L’Éclair de Génie in Milan. If you know me, you’ll know I love Paris, so this meant that I could find one of my favorite Parisian treats in my adopted city. Nowadays, it’s pretty much impossible for me to pass the Corso Garibaldi or Sarpi locations without dropping in for a merenda regardless of whether or not it’s proper merenda time.
Well, something even more exciting has happened: Christophe Adam has teamed up with Galileo Reposo, the pastry chef of Peck (another place I love!) to give the Milanesi a limited edition eclair. This clever creative marriage couples the young talent at a classic Milanese institution with a young talent offering a new take on a French classic.
The chefs have taken a classic French éclair, stuffed it with Sorrento lemon cream as well as some lemon confit, crunchy almonds and cocoa grains. It’s topped with a whipped almond ganache and decorated with beads of coffee chocolate, lemon confit, toasted and sandblasted almonds, dark chocolate petals and coffee crumbs. This little oblong pâte à choux treat is available through 10 May exclusively at Peck and the three Milan outposts of L’Éclair de Génie.
I sampled this beauty and I have to say, it’s a delight! The unusual lemon and coffee pairing is balanced by the toastiness of the almond and it all comes together quite harmoniously on both the flavor and texture fronts. Each flavor shines and it’s not too sweet, which is nice, and the acidity is perfect. The soft yet sturdy pâte à choux dough coupled with the soft cream and the crispiness of the chocolate beads and almonds is lovely. I’m just sorry that it’s only a limited edition.
