I remember the first time I had ever heard of chocolate chip cookie cake. I was relatively young, at a gem of a shopping mall in White Plains called the Galleria with friends, and we stopped at Mrs. Fields cookies for some chocolate chip cookies. There, I had noticed a photo of a gigantic iced chocolate chip. This chocolate chip cookie cake piqued my interest. It sounded simply glorious, but it had to be preordered.
Our next time at the mall, we made Mrs. Fields our first stop to order a chocolate chip cookie cake. Then, we picked it up a few hours later and shared it, and I have been hooked ever since.
Now, let me say that if you know me, you’ll know that I live for chocolate cookies. When I visit New York, I always make sure to get my chocolate chip cookie on at City Bakery and Levain in particular. However, I had honestly forgotten all about chocolate chip cookie cake until last week. During a vintage hunt in Liguria, my friend Gina published a shot of chocolate chip cookie cake in her Instagram story. “Where did you get that?!” I replied. I honestly would have boarded a train just to get my hands on one slice. “Meghan made it,” she replied.
Then it dawned on me…I can make one, too! So, I decided to make like Gina’s friend Meghan. I consulted Google and came across chocolate chip cake recipe.
The chocolate chip cookie cake tasted of nostalgia from the first bite! You might notice mine is a little darker, and I think it’s due to the dark brown sugar (the recipe said you can use dark or light!). I have a plethora of sprinkles from that my Esselunga-Harry-Potter-Wizzies collection days, so when the cake reached the 15-minute mark, I sprinkled some over the top and put it back in the oven. I was thinking of adding the sprinkles to the dough and baking them, but I wasn’t sure if it would have adverse effects on the outcome. (Any thoughts on this are welcome in the comments!)
During my pre-expat life, I loved the cake’s super sweet icing. However, I should say that my sweet tooth has changed since I moved to Italy. I thought the chocolate chip cookie cake didn’t need the icing…it tasted sweet enough and the icing would have overdone it.
Chocolate chip cookie cake is the last thing I need in the house on a regular basis. In fact, the easiness with which I made it is almost perilous. I can see myself making it over and over and over again. Thankfully, my colleagues loved it as much as I did, so I plan to keep making it…for them of course. Though I might steal a bite or two for myself….
